All About Okra: Serving This Southern Staple A Southern favorite, okra is one of the tastiest green vegetables available, but few people know how to prepare this dish to keep its flavor and nutritious value in tact. Fried okra is always a fun option, but for the health-conscious senior, this may not be the best choice.

Fresh okra salad
This delicious blend combines a variety of vegetables that will enhance the taste of your okra. Add your favorite spices and seasonings to the salad before you serve it to your friends at the retirement community.

Ingredients

  • 2 cups fresh okra, sliced
  • 3 ears corn, boiled 
  • 1 large red onion, chopped
  • 2 large tomatoes, chopped
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • salt and pepper to taste

Directions
Begin by removing the corn from each individual cob, using a knife to slice off kernels. Collect corn in a large bowl, then stir in okra, onion, tomatoes, and green and red peppers. Add salt and pepper, then continue to stir until the mixture is well-blended. Place the salad in the refrigerator for about five to six hours and serve chilled. 

Grilled okra kabobs
If you've already got the grill fired up, consider throwing this vegetable on a few metal kabob sticks to enrich the flavor. Be sure to cook alongside your meats, as the tastes will blend under the grill hood. 

Ingredients

  • 2 pounds fresh okra, washed
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 2 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • 1 clove garlic, pressed
  • salt and pepper

Directions
Cut the ends off each okra, then place them on metal kabob sticks along with green and red pepper slices. In a small bowl, combine lemon juice, olive oil, garlic, salt and pepper. Using a small brush, gently paint the liquid mixture over the vegetables, then place them on the grill. Allow each side to cook for about 10 minutes, then remove and enjoy.
