Cool Off With This Peachy Summer Dessert

Is there anything more summery than a plump, ripe peach? These sweet and juicy fruits are best in late summer, which may explain why August is National Peach Month. According to NutritionData, peaches are rich in vitamin A and C, and they also contain high levels of potassium and niacin.

There are many desserts that feature peaches, but one of our favorites comes from Bon Appétit. These Peach Champagne Floats are the perfect way to close out a barbecue, while they also make a good, sweet snack after a long day.

Peach Champagne Floats

Ingredients for six floats

6 medium peaches, halved and pitted, then sliced into four wedges
2 pints of peach or vanilla ice cream
3/4 cups of crème de cassis or raspberry liqueur
2 cups of chilled Champagne or sparkling wine

Take out six tall glasses and place three peach wedges in the bottom of each. Top this with one scoop of ice cream, then another three wedges. Another scoop of ice cream goes on top of this, and then two more peach wedges. Next, drizzle each of these concoctions with two tablespoons of crème de cassis, then pour 1/3 of a cup of Champagne on top of each. A final scoop of ice cream and another crème de cassis drizzle will give it a gorgeous look, and the taste is simply divine!
