Pick These Recipes For National Peach Month

Few fruits are as juicy and filling as the peach. These tasty fruits are ideal for putting in pies, pastries and puffs, as they can add sweet taste and nutritious value to any dish. Since peaches are such a versatile fruit, you may use them as the side or main ingredient for many different meals you'll enjoy throughout the day.

Breakfast: Peach-infused pancakes
As you search for opportunities to add fruit to your breakfast, consider this recipe, which is loaded with sweet yet healthy flavors that make your pancakes ideal for sharing around the retirement community.

Ingredients

  • 1 cup whole wheat flour
  • 1 Tbsp. cinnamon
  • 2 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 cup skim or low-fat milk
  • 1 tsp. vanilla extract
  • 1 large egg
  • 2 Tbsp. vegetable oil
  • 4 peaches, washed and sliced
  • 1 container low-fat peach-flavored syrup

Directions
Begin by combining flour, cinnamon, baking powder and salt in a medium bowl, mixing until well-blended. In a separate bowl, whisk together milk, vanilla, egg and vegetable oil. Pour wet ingredients into the bowl containing the dry ingredients and stir until the mix is lump-free. Spray a medium skillet with nonstick spray and spoon a dollop of pancake mix on the surface. As the bottom is frying, place three to four peach slices on the top of the pancake while it is still wet. When the bottom has turned golden brown, flip the pancake and allow the other side to brown. Serve pancakes with a low-fat peach-flavored syrup, or your favorite fruit-flavored option.

Snack: Fruit salad ideal for the outdoors
If you're in charge of bringing a filling side for a summer celebration, take along a delicious fruit salad that combines all your favorite flavors and foods. 

Ingredients

  • 4 peaches, washed and sliced
  • 5 kiwis, peeled and sliced
  • 1 lb. green grapes, washed
  • 1 large pineapple, sliced
  • 1 cup raspberries, washed
  • 1 cup blueberries, washed
  • 1 large box strawberries, washed and sliced
  • 1 large watermelon

Directions
Instead of serving your fruit salad in a traditional bowl, place the sweet salad in a hollow watermelon. As you're shopping for this fruit, search for one that has a naturally flat side, as it will act as the base of your bowl. Slice the watermelon in half and use a spoon to scrape out any fruit from the half with a flat side. Begin placing other fruits in the center, including your peaches, kiwis, grapes, pineapple, raspberries, blueberries, strawberries and excess watermelon. Allow the fruit salad to sit in your fridge for several hours, as this lets the juices blend together for longer.

Dessert: Homemade peach frozen yogurt
For seniors with a sweet tooth, be sure to try out this recipe that takes a fun twist on the traditional frozen treat. The peach in this recipe can be substituted for a number of fruits, so consider blending different flavors if you're feeling adventurous.

Ingredients

  • 1 cup peaches, sliced
  • 3 cups peaches, chopped
  • 3 cups low-fat plain Greek yogurt
  • 1/2 tsp. vanilla extract
  • 1/4 cup honey
  • 1/2 cup almonds, sliced

Directions
Using a blender, puree 3 cups chopped peaches and Greek yogurt. Once the mixture is uniform, gradually add vanilla extract, honey and almonds. After your ingredients are well-blended, pour into an ice cream maker and follow the manufacturer's instructions. After the frozen yogurt is removed from the ice cream maker, place it in a freezer-safe container and use a spoon to mix in 1 cup sliced peaches. Put the mixture back in the freezer for about three to four more hours and serve chilled.
