Diabetics Can Savor Salmon This Holiday Season

The recipes for appropriate hors d'oeuvres are nearly endless, but if you're diabetic, you might feel limited. This recipe for Pistachio Salmon Nuggets is a perfect example of how a festive appetizer can be both delicious and nutritious.

If you're headed to a holiday party this season, chances are you've been asked to bring an appetizer or drink to share. The recipes for appropriate hors d'oeuvres are nearly endless, but if you're diabetic, you might feel limited. The season is all about sugar, butter and fats, right? Wrong! This recipe for Pistachio Salmon Nuggets, adapted from Diabetic Living Magazine, is a perfect example of how a festive appetizer can be both delicious and nutritious.

Because the fish is rich in heart-healthy omega-3 fatty acids, high-quality protein and selenium, even non-diabetics will want to snap up this healthy salmon recipe.

Pistachio Salmon Nuggets

Ingredients for 10-12 servings

1 pound fresh, skinless salmon fillets, about 1-inch thick
2 tablespoons water
2 tablespoons reduced-sodium soy sauce
1 tablespoon fresh grated ginger
2 teaspoons toasted sesame oil or cooking oil
1 tablespoon cooking oil
1 tablespoon finely chopped pistachio nuts

Directions

Start by rinsing the fish, then pat dry with a paper towel and cut it into 1-inch chunks. Place the pieces in a resealable plastic bag and set aside.

To make the marinade, combine water, soy sauce, ginger and sesame oil (or cooking oil) in a small bowl, then add to the bag that contains the salmon chunks. Make sure the marinade coats the salmon completely, then refrigerate for 30 minutes, turning occasionally for even marination.

After 30 minutes, drain the salmon and discard the extra marinade. Heat 1 teaspoon of cooking oil in a large nonstick frying pan over medium-high heat. Add about half the salmon chunks, cooking and gently stirring for three to five minutes. Remove from the pan, place on paper towels, and then repeat the process with the remaining fish.

Transfer the fish to a serving dish and sprinkle with pistachios before bringing this tasty treat to your next party!
