Seafood Mango Salad from Sunrise of Lafayette Hill, PA

The chef at Sunrise of Lafayette Hill, PA, was inspired by the tropical flavors of his home country, The Philippines. The dish is focused around a unique twist on seafood salad, using ripe mango, a fruit that is plentiful in the island nation.

Seafood Mango Salad
Serves 8-10

Ingredients

1 ½ lb. cooked shrimp, peeled and deveined
1 lb. crabmeat
1 c. mango, peeled / seeded / diced
1 medium tomatoes, cored / diced
½ medium green pepper, finely chopped
½ cucumber, peeled and chopped
¼ onion, finely chopped
1 c. Miracle Whip
1 ½ t. Old Bay seasoning
½ t. dill
½ t. black pepper
pinch dry mustard
2 c. lettuce or mixed greens  

Instructions

  1. Gently mix all ingredients and blend thoroughly. Cover and refrigerate for an hour or until ready to use.
  2. Serve on a bed of lettuce or mixed greens.
