Strawberry Stuffed French Toast with Greek Yogurt & Almonds
Serves 4

  • ½ cup whole milk
  • 3 eggs
  • 1 tbsp granulated sugar
  • 1 ½ tsp vanilla
  • ¼ tsp ground cinnamon

  • Whisk together the milk, eggs, sugar, vanilla and cinnamon. Set aside.

  • ¼ cup vanilla Greek yogurt
  • 1 tbsp honey
  • 1 tsp lemon zest

  • Combine the yogurt, honey and lemon zest. Set aside.

  • 8 slices challah bread (or other bread)
  • 8 oz softened cream cheese
  • 4 tbsp strawberry preserves
  • 2 tbsp unsalted butter
  • Powdered sugar, as needed
  • Gound cinnamon, as needed
  • Sliced almonds, as needed
  • Sliced fresh strawberries, as needed

  • Spread the cream cheese on half of the slices of bread. Spread the preserves on the remaining slices of bread. Make four sandwiches by topping each cream cheese slice with the strawberry preserve slice.

Melt the butter on a griddle over medium heat. Dip each sandwich in egg batter for a few seconds on each side. Add to the griddle and cook for 3 minutes per side, until golden brown. Remove French toast from the heat and slice in half on the diagonal. Serve immediately with a dollop of Greek yogurt, almonds and strawberries.
