Sunrise of West Bloomfield, MI, earn the honorable title Employee of the Month! Using extra ingredients he had on hand from breakfast, he put something quick and delicious together for his fellow Dining team members – now dubbed the “Sunny Farm Delight”. It went over so well that it is now a community favorite among residents.
Sunny Farm Delight Breakfast Sandwich
Fully cook the sausage and bacon and chop to desired size. Sauté the potatoes in the olive oil until golden brown. Add the sausage, bacon, onions and peppers. Sauté until vegetables are tender. Remove the vegetables from the heat and place in a bowl, stirring in the herbs and spices. Whisk together the eggs and half and half, and then pour into a hot skillet. As the eggs set, lift the edges, letting the uncooked portions flow underneath. Add the sliced cheese halfway through cooking. When eggs are totally set, spoon half of the vegetable mixture down the middle of the omelet. Fold the omelet edges in and flip over. Spoon remaining vegetable mixture over the top. Sprinkle with shredded cheese to garnish and serve immediately.
