A Sunrise Recipe: Blueberry Crumb Cake

The dining team at Sunrise of Huntington Beach wanted to use the delicious, fresh, local blueberries when they hit peak season to create a dessert that would excite residents. By combining the fruit with leftover crumb topping, they found a fantastic dessert that quickly became a summer favorite at the community.

Considered one of our healthiest foods, blueberries are loaded with antioxidants and considered a “superfood.” Blueberries are also rich in anthocyanin, which has been shown to help improve vision and brain function while lowering the risk of cancer.  

The berries in this recipe can be of any variety, however. Blackberries and raspberries would yield equally delicious results!

Blueberry Crumb Cake
Serves 8 - 10

  • ¾ cup white sugar 
  • ¼ cup shortening 
  • 1 large egg 
  • 2 cups flour 
  • ½ teaspoon salt 
  • ½ cup milk 
  • 2 cups blueberries 
Streusel Topping
  • ½ cup brown sugar 
  • ⅓ cup flour 
  • ½ teaspoon ground cinnamon 
  • ¼ cup softened butter 
  1. Cream the sugar, shortening and egg. 
  2. Combine the flour and salt in a separate bowl.  Add to sugar, alternating with milk.
  3. Fold in blueberries. 
  4. Pour batter into a greased baking dish. 
  5. Prepare the streusel topping.  Combine brown sugar, flour and cinnamon.  Cut in butter until the mixture forms a crumb-like consistency. Sprinkle over batter. 
  6. Bake cake at 375°F until center is set and toothpick inserted comes out clean, about 30 minutes.
