The dining service coordinator at Sunrise of Silver Spring, MD, enjoys fond memories of his mother making this side dish for special family occasions during his childhood. Now, he loves to make it for our residents. They love the unique combination of flavors and extra sharpness that the feta cheese adds!

Low-fat milk can be used in place of the whole milk, but be sure to keep the heat low and whisk constantly to prevent the milk from separating.

Macaroni & Cheese
Serves 6

Ingredients:
4 cups dry elbow macaroni
4 tbsp unsalted butter
¼ cup flour
¾ tsp garlic powder
¾ tsp kosher salt
¼ tsp black pepper
2 ½ cups whole milk
2 cups grated cheddar cheese
¼ cup crumbled feta cheese

Instructions:
Preheat the oven to 350°F. Cook the pasta in boiling salted water until al dente. Drain. Rinse in cold water. Drain. Melt the butter over medium heat. Combine the flour, garlic powder, salt and pepper. Whisk flour mixture into the butter. Cook for 3 minutes. Slowly whisk in the milk, stirring constantly. Bring to a gentle simmer. Cook until thickened. Turn off the heat and stir in the cheese until melted. Combine the macaroni and cheese sauce. Pour macaroni mixture into a greased 13x9” baking dish. Bake until bubbling and golden brown.
