A Sunrise Recipe: Warm Quinoa Salad

Sunrise Senior Living  |  March 8, 2016

This recipe is an all-time favorite of our residents at Sunrise of Windsor, ON. Our chef created an exceptionally healthy side dish by combining his love for Greek salad and quinoa.

Quinoa is a complete protein, meaning it contains sufficient quantities of all amino acids. While this characteristic is traditionally found in food made from animals, such as meats, fish, milk, poultry and eggs, quinoa manages to meet these requirements as a grain.

Warm Quinoa Salad
Serves 6 - 8

  • 1 cup quinoa
  • 2 cups water
  • ½ cup crumbled feta cheese
  • ¼ cup diced tomatoes
  • ¼ cup green peppers, seeded and chopped
  • ¼ cup Kalamata olives, pitted and chopped
  • 2 tablespoons chopped fresh oregano
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  1. Place the quinoa and water in a pot. Bring to a boil.
  2. Reduce to a simmer, cover tightly, and simmer until water is absorbed and quinoa is tender, about 15 – 20 minutes. Turn off the heat and let stand for 5 minutes before fluffing with a fork.
  3. Combine quinoa and remaining ingredients. Season to taste.
