Veterans Day and Remembrance Day, November 11th and 12th, are an opportunity for family and friends to gather together and pay tribute to all of those who have spent time in the armed forces. Because so many people have the following Monday off from school and work, seniors may find they have more visitors than usual.
However, there are ways to be prepared for your guests. In fact, you may want to consider making a theme with your food items. As you may have done during other patriotic holidays, serving flag-decorated treats is a great way to remember the importance of Veterans and Remembrance Day.
Cookies are a great way to show off the theme, as they're portable and people can take as many as they want without having to worry about sitting down to eat. This is a large recipe, so feel free to provide some treats to your peers at your assisted living facility, or bring batches to all the veterans in your life.
Sugar Star and Flag Cookies
Makes 120 cookies

1 cup butter, softened
1/2 cup cream cheese, softened
2 cups sugar
1-1/2 teaspoons vanilla extract
1 teaspoon lemon extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
Decorating icing in red, white and blue.
Use a hand mixer to cream butter, sugar and cream cheese until the mixture has a fluffy texture. Add eggs and extracts.
In another bowl, mix baking powder, salt and flour, and gradually add this to the cream mixture while working with the hand blender.
Refrigerate batter for two hours.
Preheat the oven to 350. Flour sturdy surface and roll out dough. Use 2-by-3 inch rectangle cookie cutters and place one inch apart on an ungreased baking sheet.
Bake for nine to 11 minutes and let cool for two minutes. Decorate with a flag pattern using the colored icing.
