A Sunrise Recipe: Sepideh’s Strawberry Cream Cake

To say that the strawberry is good for you, hardly does this low-calorie treat any justice! Strawberries can help to lower blood pressure, guard against cancer and protect the heart. They have vitamins, fiber and high levels of antioxidants as well. Therefore, why not include them in a recipe to please your sweet tooth? That’s exactly what dining service coordinator, Sepideh, at Sunrise of Lynn Valley in British Columbia does with her Strawberry Cream Cake recipe!

  • 6 eggs
  • 2 cups flour
  • 1 cup sugar – divided into 2 half cups
  • 1 tsp. baking powder
  • 2 tsp. vanilla extract OR 1 vanilla bean
  • 1 L. whipping cream
  • 1 Kg strawberries
  • 1 cup icing sugar

  • Directions

    Separate the egg whites from the yolks. In separate bowls, whip the whites with ½ cup sugar, and the yolks with ½ cup sugar until both light and airy. Combine the vanilla and the eggs in one bowl. Whisk the flour and baking powder into the egg mix. Put the mix in a greased baking pan (your choice), and bake in a preheated oven (325 F) for 30-40 minutes. Cool the cake, then cut into 2 to 3 layers. Whip the cream with the icing sugar until peaks form. Wash and cut the strawberries and layer the cake with whipped cream and strawberries. Save some cream to cover the cake, and decorate with fresh berries. Share with family and friends, and enjoy!
