Make This At Home: A SeniorEats™ Recipe for Fettuccini with Walnut Cream Sauce

At Sunrise communities, dining is all about fresh, flavorful and nutritious meals. Sunrise chefs meet the unique nutritional needs of seniors, while also creating a variety of delicious and creative offerings.

This year, Sunrise hosted the first-ever SeniorEats™ Nutritional Challenge at The Fairfax, a Sunrise community in the Washington, D.C. metro area. Five chefs from Sunrise communities across the U.S. and Canada competed in the cook-off competition.

This recipe, brought to us by Angela Nawrocki of Sunrise of Worthington (Ohio), features heart-healthy walnuts and is also high in fiber, low-sodium and high in iron. Walnuts are an excellent source of antioxidants, especially vitamin E.  They are also a great source of omega-3 fatty acids, with a ¼ cup serving providing you with nearly the entire recommended daily amount. Walnuts can also complement this delicious banana bread recipe, for a sweet and healthy treat.

Fettuccini with Walnut Cream Sauce
Serves 6


3 cups chopped walnuts
½ cup cream cheese
¼ cup milk
¼ cup olive oil
1 slice white bread, diced
3 cloves garlic, peeled / minced
½ cup + 3 tbsp half and half
12 oz dry fettuccini pasta

Place the walnuts, cream cheese, milk, olive oil, bread and garlic in a food processor.  Process until smooth. Stir in the cream to give a thick consistency.  Heat through and set aside.

Cook the pasta in boiling water until al dente.  Drain well.

Arrange the pasta in a serving dish and toss with the walnut sauce.  Serve immediately.
