A Sunrise Recipe: Chilled Strawberry Soup

, developed this seasonal recipe intended for spring and
particularly popular at the community’s annual Mother’s Day Brunch celebration.
Strawberries are central to this recipe, and are very high in vitamin C, which helps promote healthy immune functions and may also help protect against cardiovascular disease, eye disease and stroke.
For another take on this dish, try different fruits such as peaches, nectarines, honeydew or watermelon.
Chilled Strawberry Soup
Serves
8 – 10
Ingredients:
1 pound fresh strawberries, hulled
1 quart plain yogurt
½ cup honey
½ cup orange juice
½ bottle sparkling apple cider
Fruit Salad
1 kiwi, peeled and small diced
2 strawberries, hulled and small diced
⅛ cantaloupe, peeled, seeded and small diced
Place the strawberries, yogurt, honey and orange juice in a blender. Puree until smooth.
Cover and refrigerate the soup overnight.
Just before serving, whisk in the sparkling cider.
Assemble fruit salad by gently combining the kiwi, strawberries and cantaloupe.
Garnish the soup with the fruit salad and serve.
