A Sunrise Recipe: Braised Chicken & Kale

This delectable one pot meal from our Sunrise of West Hills, CA, community merges hearty vegetables and lean protein into a meal perfect for a cool winter evening.

Braised Chicken & Kale
Serves: 6-8


Ingredients:

  • 1 tablespoon olive oil
  • 1 cup corn
  • ½ cup cherry tomatoes
  • ½ cup red onion, diced
  • 2 garlic cloves, peeled and minced
  • 4 cups chicken stock
  • 4 boneless/skinless chicken breasts, diced
  • 4 cups kale, chopped
  • Kosher salt and black pepper to taste Freshly grated Parmesan

Instructions:

  1. Heat olive oil over medium heat. Add corn, tomatoes, onion, and garlic. Sauté until soft.
  2. Add stock, chicken and kale. Bring to a boil, reduce to a simmer. Cover and braise for 20 minutes, until kale is wilted and internal temperature of chicken reaches 165º F
  3. Season to taste. Serve immediately topped with freshly grated Parmesan cheese.
