A Sunrise Recipe: Chicken Satay

Our chef at Sunrise of Carmichael, CA, used to cook this tasty Chicken Satay dish with his mother. A lot of happy memories come from cooking this dish, which he cooks regularly for residents. It’s become a menu favorite!

Chicken Satay
Serves 10


  • 2 ½ pounds of chicken breast, cut into 1-inch strips
  • 1 cup soy sauce
  • ½ cup pineapple juice
  • ¼ cup rice wine vinegar
  • 2 tablespoons ginger, grated
  • 2 tablespoons garlic, minced
  • 20 bamboo skewers, soaked in water for an hour


  1. Combine soy sauce, juice, vinegar, ginger and garlic. Add chicken and toss to coat. Cover and refrigerate for 1 hour to marinate.
  2. Heat grill.
  3. Thread each piece of chicken onto a skewer. Grill over high heat until well-marked and internal temperature reaches 165º F.

Peanut Sauce

  • 1 cup peanut butter
  • ¼ cup coconut milk
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • Red chili flakes to taste

Peanut Sauce

  1. Combine peanut butter, coconut milk, lemon juice, and honey in a small saucepan. Cook over medium heat until thick (about 4 minutes). Season with chili flakes to taste.
  2. Serve chicken satay with peanut sauce on the side.
